Roughly slice the banana and add it to a bowl with the eggs. Using a hand blender, mix everything a few times until everything is combined and there are no more lumps floating in the liquid. Then fry them in hot oil until they are pancakes. The pancakes are even moister and better when they are a bit thicker. I usually use a metal ring, but you can also just put a small dollop in the pan and then gradually pour on a little more batter. In total, depending on the thickness of the pancakes and the size of the ingredients, I usually get 12 to 16 small pancakes from the mixture. Whether for breakfast or as a snack, on their own or with a dollop of Nutella, it’s simply divine.
