Italian oven-baked vegetables alla Mäusle

Ingredients for 4 servings:

  • 4 m.-sized onion(s)
  • 2 cloves garlic
  • 4 m.-large zucchini
  • 2 red bell peppers
  • 4 tbsp olive oil
  • 2 tsp, leveled salt
  • 2 tbsp dried Italian herbs
  • 1 pinch(s) chili powder or flakes
  • pepper

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 10 minutes

Neutral food combining recipe

Preheat the oven to 200 degrees Celsius (top/bottom heat). Peel the onions, halve them, and cut into large cubes. Peel and finely chop the garlic. Wash the zucchini, trim off the blossoms and stems, halve them, cut them in half again, and cut them into large cubes. Wash the bell peppers, halve them, remove the white pith and seeds, and also cut them into large cubes. Place the vegetables in a large, shallow baking dish. Add the olive oil, salt, chili powder, Italian herbs, and generously ground pepper, and mix everything together, preferably with your hands. Braise in the oven for 30 minutes. Then stir well and cook for another 15 to 30 minutes, depending on how firm you want the vegetables to be. I serve the oven-baked vegetables as a side dish. As a main course, I spice them up with pitted olives and serve with baguette. Please note: This will put the dish in the carbohydrate group.
