Sweet and sour zucchini

Ingredients for 1 servings:

  • 2 kg zucchini
  • 1 kg bell pepper(s), red
  • 500 g onion(s)
  • 2 lemons
  • ¾ liter vinegar
  • 1 liter of water
  • ½ liter apple juice
  • 20 g sugar
  • 3 tsp salt
  • 1 tsp curry powder
  • 1 bunch dill, coarsely chopped
  • 2 tbsp mustard seeds

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Peel the zucchini, remove the seeds, and cut the zucchini into small pieces. Clean the bell peppers and cut into small strips, and thinly slice the onions. Squeeze the lemons. Heat the lemon juice with vinegar, water, apple juice, sugar, salt, curry powder, dill, and mustard seeds and bring to a boil. Add the zucchini, bell peppers, and onions and cook briefly. While still boiling hot, transfer everything to screw-top jars and seal the jars immediately. The weight of the vegetables stated above applies to the cleaned and prepared vegetables.
