Ingredients for 1 servings:
- ½ bunch parsley, roughly chopped
- 2 garlic cloves, coarsely chopped
- 3 tsp olive oil
- salt and pepper
- 3 medium-sized boiled potatoes
- 3 tomatoes
- 2 tbsp Parmesan, grated
- 2 tsp balsamic vinegar, white
Instructions

As an amuse gueule or for a buffet
Puree the parsley, garlic cloves, and olive oil together and season generously with salt and pepper. Cut the potatoes and tomatoes into equal slices, approximately 1 cm thick. Place the potato slices on a baking sheet lined with baking foil and spread with the parsley puree. Place a tomato slice on each slice and sprinkle with Parmesan cheese. Bake in a preheated oven at 220°C for approximately 10 minutes. Drizzle the tomato and potato snacks with a little balsamic vinegar and serve.
