Spinach casserole

Ingredients for 4 servings:

  • 6 eggs
  • 750 g leaf spinach, frozen
  • 1 onion(s)
  • 2 tomatoes
  • 125 g cheese, grated
  • 100 g crème fraîche
  • salt and pepper
  • nutmeg
  • Oil for frying or butter

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour

low-carb, vegetarian

Boil the eggs until medium-hard. Slice the onion into rings and finely chop the tomatoes. Heat the butter and fry the onion, then remove from the heat. Thaw the spinach in the pan juices and season generously with salt, pepper, and nutmeg. Place the spinach in a shallow baking dish. Halve the eggs and arrange them on top of the spinach. Sprinkle the onion and tomatoes on top. Mix the cheese and crème fraîche and spread over the top. Bake in a preheated oven at 180°C for 15-20 minutes. Serve with potatoes or hearty farmhouse bread.
