Winter apple compote with raisins and spices

Ingredients for 1 servings:

  • 1 kg apples (prepared, weighed, even fallen apples are suitable)
  • 200 g sugar
  • 100 g raisins
  • 1 packet of vanilla sugar
  • 2 cl rum (orange juice for the non-alcoholic version)
  • ½ tsp cinnamon
  • 1 pinch of cardamom
  • e.g. lemon juice (approx. 1/2 lemon)
  • 1 pinch of anise

Working time approx. 45 minutes; Total time approx. 45 minutes

Wash and core the apples, cut them into small pieces, and place them in a saucepan. I don’t peel them for flavor, and I find the apple pieces look better with the skin on. Then add the sugar, raisins, vanilla sugar, and lemon juice and mix. Bring the mixture to a boil and simmer until the apple pieces are still firm to the bite. Now add the spices and the shot glass of rum (or orange juice), bring back to a boil briefly, and then pour the mixture into twist-off jars while still hot. I make the non-alcoholic version without the rum and use orange juice instead.
