Ingredients for 8 servings:

  • 2 kg potato(s), waxy
  • 2 onions, diced
  • 200 g ham (Katenschinken) or streaky bacon, in cubes
  • 20 ml olive oil
  • 2 tbsp instant broth
  • 100 ml water
  • 8 tbsp mayonnaise (preferably homemade)
  • 80 ml balsamic vinegar, white
  • 2 tsp salt

Instructions

Working time approx. 40 minutes; Rest time approx. 2 hours; Cooking/baking time approx. 20 minutes; Total time approx. 3 hours

for the barbecue party

Boil the potatoes – but not for too long. Peel while still hot and let them evaporate. Once cooled, cut into not-too-thin slices (3-5 mm thick). Sauté the onions and ham in olive oil until translucent. Deglaze with water and bring to a boil with the instant broth. Pour the onion and ham mixture over the potato slices, add mayonnaise, salt, and vinegar, and stir gently. Cover and season again after 2 hours, adding more vinegar or salt if necessary.
