Bruschetta spread made from canned tomatoes

Ingredients for 4 servings:

  • 400 g tomatoes, whole from the can
  • 50 g onion(s), diced
  • 1 g garlic clove(s), squeezed
  • 10 g parsley
  • 10 ml olive oil
  • 10 ml balsamic vinegar
  • 5 g salt
  • 1 g pepper

Instructions

Working time approx. 5 minutes; Rest time approx. 15 minutes; Total time approx. 20 minutes

Cut whole tomatoes in half. Drain the tomatoes in a colander—only large pieces are needed. The juice can be saved and blended into a tomato juice. Mix the tomato pieces with the onion, herbs, and spices and let it steep. This tastes delicious on dark toast or brown bread. Optional ingredients: Black olives, finely chopped, mint or cilantro, avocado, and corn.
