Vegan chia pudding with rhubarb and tofu

Ingredients for 2 servings:

  • 400 g silken tofu
  • 1 kg rhubarb
  • some water
  • 4 tbsp chia seeds
  • e.g. sugar or sweetener

Instructions

Working time approx. 20 minutes; Rest time approx. 8 hours; Cooking/baking time approx. 15 minutes; Total time approx. 8 hours 35 minutes

First, wash and finely chop the rhubarb, then simmer it with a little water until the mixture becomes stringy, stirring with a whisk. Sweeten as desired. In a bowl, stir the tofu until creamy. Then stir in the rhubarb and add the chia seeds. Refrigerate overnight to allow the seeds to swell.
