Cucumber salad with spring onions and garden cress

Ingredients for 2 servings:

  • 1 cucumber(s)
  • 2 large spring onions
  • 1 tbsp, heaped garden cress
  • 1 tbsp apple cider vinegar
  • 1 pinch of herbal salt
  • 1 pinch(s) of pepper
  • 1 pinch of hot paprika powder
  • ½ tsp mustard, hot
  • ½ tsp lovage paste see recipe in the database
  • 5 drops maple syrup
  • 1 tbsp rapeseed oil
  • 5 drops of pumpkin seed oil

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Peel the cucumber and slice or grate it. Wash, trim, and slice the spring onions. Cut the garden cress from the pot. For the salad dressing, lightly whisk together the vinegar, herb salt, pepper, paprika, mustard, Maggi seasoning, maple syrup, and rapeseed oil in a bowl. To serve, place the cucumber and spring onions in a salad bowl, mix in the salad dressing, and sprinkle the salad with the cress. Finally, drizzle with the pumpkin seed oil.
