Lamb's lettuce with cassis vinaigrette

Ingredients for 2 servings:

  • lamb’s lettuce (a few handfuls)
  • 4 tbsp oil (grape seed oil)
  • 6 tbsp balsamic vinegar (more acidic)
  • 2 tsp mustard, hot
  • 1 tsp cassis, (more if desired…)
  • 1 tbsp tarragon, dried
  • 5 tsp pine nuts (toasted in a pan without fat)
  • salt and pepper

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Trim the lamb’s lettuce. Mix the other ingredients well. Sprinkle the pine nuts either in the vinaigrette or later over the salad. Be careful with the cassis at first; season frequently. Add more mustard if needed (depending on the mustard’s spiciness). Mix the salad with the vinaigrette.
