Apple rice pudding casserole

Ingredients for 4 servings:

  • 700 g apples, peeled, diced
  • 80 g cane sugar
  • 1 orange(s)
  • 100 g raisins
  • 250 g rice pudding
  • 1 can coconut milk
  • 600 ml water
  • 300 ml soy milk (soy drink), vanilla
  • 1 tsp, heaped cinnamon
  • 2 packets of vanilla sugar

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 1 hour 10 minutes; Total time approx. 1 hour 40 minutes

Bring the water and coconut milk mixture to a boil in a non-stick saucepan with half the sugar and vanilla sugar, then add the rice pudding and simmer on low heat for at least 30 minutes, until the rice has swelled. Stir frequently during this time. Peel and chop the apples, drizzle with the orange juice to prevent them from browning, and mix with the other half of the sugar, vanilla sugar, cinnamon, and raisins. Grease a large baking dish and spread half of the rice pudding on the bottom, then top with the apple mixture and the rest of the rice pudding. Pour the vanilla drink over the rice pudding and place in the oven. Bake at 200°C for approximately 30 minutes. Can be enjoyed hot or cold.
