- 60 g desiccated coconut or almonds or hazelnuts, chopped

Finely mash a very ripe banana with a fork and stir in 60g of desiccated coconut. Chopped almonds or hazelnuts will probably also work for those who don’t like desiccated coconut. Using a teaspoon, place small macaroons onto a baking sheet lined with parchment paper. Bake in an unheated oven at 150°C (top/bottom heat) for 20 minutes. This mixture makes about 16 cookies.
