  • 4 nectarines, ripe
  • 1 package of gelling sugar, 1:2

This recipe makes about 6 small twist-off jars. Peel the fruit and core the mango and nectarines. Dice the fruit and place it in a saucepan as wide as possible to ensure even heating. Sprinkle with the preserving sugar and bring to a boil. Boil gently for about 3 minutes, then skim off the foam and quickly pour into clean jars. Seal and turn upside down for about 5 minutes. Shelf life: about 4 months.
