Ingredients for 4 servings:

  • 1 bunch of spring onions
  • 2 beefsteak tomatoes
  • 6 eggs
  • 4 tbsp milk
  • Salt and pepper, white
  • 1 bunch of parsley
  • 2 tbsp butter or margarine

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Finely slice the spring onions. Dice the tomatoes. Whisk the eggs and milk in a bowl and season with salt and pepper. Finely chop the parsley. Stir into the egg mixture. Heat the fat in a pan and briefly sauté the spring onions and tomatoes. Pour in the egg mixture and stir until thickened.
