Meatballs with Vegetable Rice
The perfect meatballs with vegetable rice recipe with a picture and simple step-by-step instructions.
Bifteki
- 400 g Minced lamb
- 40 g Onion cubes
- 1 toe Fresh garlic
- 1 Pc. Egg
- 1 tablespoon Panko
- 1 tsp Crush cumin
- 75 g Feta
- 1 tsp Oregano
- 1 tsp Thyme
- Salt
- Black pepper from the mill
- Extra virgin olive oil
vegetable rice
- 160 g Long grain rice
- Red pepper
- 0,5 bunch Chives fresh
- 2 Pc. Tomatoes
- 250 ml Vegetable broth
- 25 g Onion cubes
- Salt
- White milled pepper
- 1 tablespoon Extra virgin olive oil
Balls
- Finely dice the garlic. Toast the cumin without fat in a pan. Then pound in a mortar. Roast the onion and garlic in a tablespoon of olive oil. Knead the mince with the egg, cumin, herbs, onion-garlic mixture and panko. Season well with salt and pepper. Divide the feta into six cubes. Shape the mince into six balls and fill with cheese cubes. Fry in the remaining oil for about five minutes until juicy.
- Skin, core and finely dice tomatoes, puree and season to taste. Also peel, core and finely dice the peppers. Sauté in olive oil with the rice and the onion cubes. Salt. Add the tomato puree and top up with the broth. Cook while stirring for about 20 minutes and season to taste. Fold in the chives. Arrange the rice with the Bifteki and serve.
