Roasted broccoli with cherry tomatoes, feta, coarse sausage and fennel seeds

Ingredients for 4 servings:

  • 800 g broccoli
  • 400 g bratwurst, coarse
  • 150 g feta cheese
  • 200 g cherry tomatoes
  • 1 bunch of chives
  • 1 tsp fennel seeds or anise seeds
  • 2 m.-large onion(s), red
  • 3 tbsp olive oil
  • Black pepper, freshly ground
  • Salt

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 40 minutes

Clean the broccoli and divide it into small florets. Peel the stalk and chop it finely. Cook both in boiling salted water for 2-3 minutes, then drain. Crumble the feta and chop the chives. Wash the cherry tomatoes, then halve them. Grind the fennel seeds in a mortar. Peel and chop the onions. Halve the sausage lengthwise, remove the meat from the casing, roughly chop it, and fry it in a pan with olive oil, stirring. Add the onions and fennel and cook. Then add the broccoli and cherry tomatoes and cook them. Finally, fold in the feta, add the chives, and season with salt and pepper.
