Green asparagus with minced meat

Ingredients for 2 servings:

  • 200 g asparagus, green
  • 1 bell pepper
  • 1 zucchini
  • 3 spring onions
  • 500 g minced beef
  • 1 tsp coconut oil
  • Cayenne pepper
  • Paprika powder
  • Salt

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes

Cut the green asparagus into bite-sized pieces and cook in boiling water for 5-10 minutes, depending on their thickness. Wash and finely chop the bell peppers, zucchini, and spring onions. Melt coconut oil in a pan, fry the vegetables, and set aside. Fry the ground beef in another pan until crumbly. Add the vegetables to the pan with the ground beef. Drain the green asparagus in a colander, add it to the ground beef and vegetable pan, and stir to combine. Finally, season with cayenne pepper, paprika, and salt, if desired.
