Ingredients for 1 servings:

  • 900 g red currants
  • 500 g gelling sugar 1:2

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 4 minutes; Total time approx. 19 minutes

Sort and wash the currants and drain well. Mash them slightly in a saucepan with a potato masher. Mix the berries with the preserving sugar and boil gently for about four minutes. Then, while still hot, pour into clean screw-top jars as usual. Tip: If you don’t like the seeds, you can strain the currants through a sieve after cooking and then bring back to a boil briefly. This yields approximately six small jars.
