Pear and ginger jam

Ingredients for 1 servings:

  • 1,500 g pear(s) (ripe)
  • 850 g sugar
  • 1 tbsp lemon(s), the juice
  • 40 g ginger, candied
  • 2 tsp fresh ginger
  • 1 tsp lemon peel, grated

Instructions

Working time approx. 1 hour; Total time approx. 1 hour

Prepare a large bowl of cold water. Peel, halve, quarter, core, and slice the pears, and add them to the bowl with the water. Grate the lemon zest and squeeze out the juice. Finely chop the candied ginger, peel the fresh ginger, and finely grate it. Drain the water from the pears and place them in a large saucepan. Add the sugar and lemon juice, and bring to a boil while stirring. Stir until the sugar has dissolved. Reduce the heat to low, add the lemon zest, candied ginger, and fresh ginger. Stir this in and simmer gently for 45-50 minutes. It’s best to test for settling at this point. Pour the jam into sterilized jars while it’s still hot and seal them. This makes 5 jars of 250ml each.
