Ingredients for 1 servings:

  • 1 cup desiccated coconut
  • 1 cup ground almonds
  • 1 cup pitted dates
  • 1 lemon(s), organic, grated peel
  • 3 tbsp lemon juice
  • some vanilla pod(s), scraped pulp
  • 1 pinch of salt
  • 2 tbsp oil, neutral

Instructions

Working time approx. 15 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 15 minutes

Raw, no-bake, with coconut flakes, almonds and dates

I use a coffee mug as a measure, not a small coffee cup. Put the coconut flakes and almonds in a bowl with a pinch of salt. If the dates are still hard, soak them in water for an hour beforehand, drain the water, and pat dry. Then, in a food processor or blender, process the pitted dates until they become a puree. Add the mixture to the bowl. Finally, add the lemon juice, lemon zest, and vanilla. Knead the mixture well with your hands until a sticky dough forms. Oil a baking dish approximately 20×20 cm, press the dough flat into the dish, and chill in the refrigerator. If desired, sprinkle with coconut flakes and cut into strips.
