Fig jam with ginger

Ingredients for 1 servings:

  • 1 kg fig(s), blue
  • 500 g gelling sugar, 2:1
  • 30 g ginger, freshly grated
  • 3 tsp cinnamon
  • 2 lemons, untreated, peel and juice
  • 125 ml water

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Roughly chop the figs and bring to a boil with the water. Simmer over low heat until they break down and are slightly mushy. Then add the gelling sugar, grated ginger, cinnamon, and the lemon juice and zest, and boil gently for about 7-10 minutes. Test for setting. Pour into hot, rinsed jam jars and seal tightly.
