Kaiserschmarrn Low Carb

Ingredients for 2 servings:

  • 4 eggs
  • 30 g erythritol (sugar substitute)
  • 40 g spelt flour
  • 80 g protein powder (natural or vanilla)
  • 300 ml almond milk (almond drink)
  • 1 tbsp almond flakes
  • 1 tbsp raisins
  • 1 pinch(s) salt
  • some lemon zest
  • 1 tbsp coconut oil
  • 100 g apple sauce or fruit puree, unsweetened
  • n. B. Vanilla flavor

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

Separate the eggs and beat the egg whites with a pinch of salt until stiff peaks form. Place the egg yolks and erythritol in a bowl and beat with a hand mixer until frothy. Stir in the almond milk alternately with the flour and egg white powder. Stir in the raisins. Stir in a few drops of vanilla extract and a little lemon zest, if desired. Carefully fold in the beaten egg whites. Heat the coconut oil in a pan. Pour in the batter and fry over low heat. After about 5 minutes, when the underside is lightly browned, carefully tear the batter into smaller pieces and sprinkle the flaked almonds over them. Turn the batter over a few times and continue to fry gently. When all sides are lightly browned, plate the Kaiserschmarrn and serve with apple sauce.
