Ingredients for 1 servings:
- 40 g oat flakes, wholegrain
- 1 tbsp chia seeds
- 2 dates, dried, pitted
- 0.33 vanilla pod(s), of which the pulp
- 120 ml coconut milk
- 1 Sharon fruit, very ripe
- 1 tsp, heaped coconut chips or desiccated coconut, roasted
Instructions
Working time approx. 10 minutes; Rest time approx. 12 hours; Total time approx. 12 hours 10 minutes
Mix the oats, chia seeds, chopped dates, and vanilla bean paste with the coconut milk, cover, and refrigerate overnight. The next day, top with the peeled and pureed Sharon fruit and serve the overnight oats sprinkled with coconut chips.
