Fruit ice cream with tofu

Ingredients for 4 servings:

  • 500 g fruit (e.g. strawberries, raspberries, blackberries, apricots, etc.)
  • 4 tbsp lemon juice (organic store in small bottles)
  • 4 tbsp maple syrup
  • 100g tofu
  • 100 ml soy milk (soy drink) vanilla

Instructions

Working time approx. 20 minutes; Rest time approx. 4 hours; Total time approx. 4 hours 20 minutes

After washing the berries, drain them and remove any pits, then place them in a blender. Add the other ingredients and blend thoroughly. Transfer the fruit mixture to a shallow bowl and freeze for 1 hour. Then, whisk thoroughly and freeze for another 3 hours. You can also pour the mixture into an ice cream maker and freeze for 30 minutes. If you’re in a hurry, simply use frozen fruit and blend it with a little more vanilla soy milk. This creates a sorbet. It tastes divine and is low in calories.
