Ingredients for 4 servings:

  • 500 g wheat, ground
  • 500 g wheat flour, type 812
  • 35 g salt
  • 18 g dry yeast
  • 650 ml kefir (milk kefir)
  • 200 ml water, warm
  • 1 tsp sugar

Instructions

Working time approx. 30 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 30 minutes

Rolls made from milk kefir grains

Knead the ingredients thoroughly in a food processor. Let rise for 60 minutes, then knead the dough again briefly and form dough balls. Let rise for another 30-45 minutes, covered with cling film to prevent the surface of the dough balls from drying out. After about 25 minutes, score the dough balls or shape them with a bun maker. Place in the oven preheated to 250 degrees Celsius and moisten the oven with a water spray. Let bake for 10 minutes. During this time, spray the oven with water 2-3 times. Then reduce the temperature to 200 degrees Celsius and bake for another 15 minutes.
