Gnocchi made from leftover mashed potatoes

Ingredients for 2 servings:

  • 400 g mashed potatoes, from the day before or leftovers
  • 150 g flour
  • 2 egg yolks
  • salt and pepper
  • nutmeg

Working time approx. 30 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 35 minutes

Combine all ingredients in a bowl and knead into a smooth dough. Sprinkle flour on a work surface and knead the dough again lightly. Tear off small pieces of dough and form small balls, pressing them lightly with a fork to make them look a bit like gnocchi. Bring to a boil in salted water and let them simmer until they rise to the top, like dumplings. If desired, you can serve the gnocchi with your favorite sauce or briefly fry them in a pan with butter and Parmesan cheese.
