Ingredients for 1 servings:
- 150 g zucchini
- 50 g leek
- 90 g shrimp(s) or crab
- 2 tbsp coconut oil or olive oil
- some chili flakes or pepper
- 3 tsp, heaped sour cream or crème fraîche
- 2 m.-sized eggs
- some salt (Society Garlic Salt) or Himalayan salt
- n. B. Coriander leaves
- 4 small cocktail tomatoes
Instructions
Working time approx. 5 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 10 minutes
with zucchini and shrimp, ideal for the evening
Cut the leek into thin rings and the zucchini into quarters, skin on. Halve the tomatoes (at room temperature). Add the oil to the pan and fry the zucchini and leek. Add the shrimp and cook briefly. Season and add the sour cream. Stir in the eggs. Finely chop the coriander leaves and mix in. Pour the tomatoes over the food just before serving.
