Spicy chicken or turkey breast chili

Ingredients for 4 servings:

  • 800 g chicken breast fillet(s) or turkey breast fillet, chopped
  • 1 bell pepper(s), red, finely diced
  • 1 bell pepper(s), yellow, finely diced
  • 2 carrots, peeled and grated
  • 1 large onion(s), chopped
  • 1 garlic clove(s), finely chopped (or 2 if needed)
  • 2 stalk(s) celery, finely diced
  • 500 g chopped tomatoes (canned tomatoes)
  • 1 pack of tomatoes, pureed
  • 1 tsp, leveled chili powder (or less)
  • 1 tsp paprika powder
  • 1 tsp, leveled cumin
  • some cayenne pepper
  • 1 bay leaf
  • 200 ml chicken broth or stock
  • salt and pepper
  • rapeseed oil

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour

Low-carb

Sear the minced chicken or turkey in a little rapeseed oil in a pan for 2-3 minutes, season with salt and pepper. When it is fully browned, transfer to a bowl and keep warm. Reduce heat and fry the bell peppers, carrots, onions, celery and garlic in the pan for 3-5 minutes, add the spices and fry for another 1 minute. Increase heat and add the chopped tomatoes, passata, chicken stock and bay leaf. Bring to a boil briefly and then simmer uncovered over low heat for 15 minutes. At the end, add the minced meat and simmer for another 5 minutes. Remove the bay leaf before serving. If you are not following a low-carb diet, serve with baguette. Tip: Serve with Creme Cuisine or Cremefine if desired.
