Baked goat cheese with strawberry salad

Ingredients for 4 servings:

  • 600 g goat’s cheese, mature (‘La Zick’ is ideal)
  • 800 g strawberries, cleaned and sliced
  • 100 g pistachios, green, chopped
  • 1 cl raspberry liqueur
  • 50 ml sauce (strawberry sauce)
  • 100 ml honey (pine honey)
  • black pepper, freshly ground

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Wash the strawberries, including the green stems. Then hull and slice them, and place them in a bowl. Add the chopped pistachios, raspberry brandy, and strawberry sauce to the strawberries and mix gently. Cut the goat cheese, including the rind, into equal-sized slices. Place on a baking sheet lined with baking paper. Bake in a preheated oven at 190°C (grill works well too) for about 10 minutes. When it’s already lightly browned and starting to melt, it’s done. Arrange the strawberry salad in the center of each plate and top with the goat cheese. Take a teaspoon of pine honey and drizzle it all over. Finally, sprinkle generously with freshly ground black pepper and serve immediately.
