Ingredients for 5 servings:

  • 1 kg plum(s)
  • 180 g sugar
  • 150 ml water
  • 1 lemon(s), juice
  • 1 cinnamon stick(s)
  • 5 cloves

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

Side dish for Kaiserschmarren etc., can be prepared in advance

Bring water to a boil with sugar, lemon juice, the halved cinnamon bark, and cloves (if desired, place in a tea strainer). Add the halved, pitted plums, bring to a boil while stirring, and continue to simmer gently until the plums have partially disintegrated, about 20 minutes. Remove the spices. I make a large batch of this during plum season, fill it into jars, and store it in the refrigerator for several months. It can also be frozen. In Austria, plum compote is a classic accompaniment to Kaiserschmarren (sweet pancakes). It also tastes excellent with semolina pancakes, curd casserole, or as a compote—cold or warm, depending on your taste. One serving of 5 has 284 kcal.
