Garlic – Rosemary – Potatoes

Ingredients for 4 servings:

  • 1 kg potatoes, small, waxy (e.g. Siglinde)
  • 4 garlic cloves
  • 3 sprigs rosemary
  • salt and pepper
  • olive oil

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Press the garlic through a press and add it to a baking dish with the olive oil. Season with salt and pepper. Peel and wash the potatoes, and add them to the garlic oil. Stir them gently to coat them on all sides, then simply place the rosemary on top. Place in the oven at 190°C (fan oven) and stir gently every 8-12 minutes to coat the potatoes with oil. Roast for 30-60 minutes to develop a crispy garlic crust. The potatoes should turn a nice light brown.
