Low-carb rice pudding with konjac rice

Ingredients for 1 servings:

  • 200 g konjac rice
  • 250 g low-fat curd cheese
  • 1 vanilla pod(s)
  • 100 g berries
  • 3 dashes of Stevia

Instructions

Working time approx. 10 minutes; Rest time approx. 5 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 20 minutes

Rinse the konjac rice thoroughly with cold water in a sieve to remove any fishy smell. Bring the water to a boil and boil the konjac rice for 5 minutes, drain, and let cool. Scrape out the seeds from the vanilla bean and stir them into the quark along with the sweetener and the cooled rice. Finally, stir in the berries. Let everything sit in the refrigerator for a few minutes so the konjac rice (which has no flavor of its own) can absorb the flavor of the other ingredients.
