Hearty goulash soup

Ingredients for 6 servings:

  • 500 g beef goulash
  • 1 large onion(s), finely diced
  • 2 cloves garlic, finely diced
  • 2 tbsp clarified butter
  • 800 ml beef broth
  • 150 ml red wine
  • e.g. salt and pepper
  • 3 tsp paprika powder, hot
  • 3 tbsp paprika powder, sweet
  • 1 tbsp tomato paste
  • 2 tbsp sugar
  • 4 sprigs of marjoram, leaves coarsely chopped
  • 2 bay leaves
  • 3 large potatoes, cut into cubes
  • 1 large carrot(s), sliced
  • 2 bell peppers, diced
  • ½ bunch parsley, finely chopped

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 1 hour 30 minutes; Total time approx. 1 hour 50 minutes

Brown the beef cubes in clarified butter for 5 minutes, stirring occasionally, then add the onions and garlic pieces and sauté for another 5 minutes. Deglaze with beef stock and red wine, season with salt, pepper, sugar, paprika, bay leaves, tomato paste, and marjoram. Then simmer gently with the lid on for about 60 minutes. Add the potato, bell pepper, and carrot pieces and simmer for about 20 minutes, until the vegetables are tender. Stir in the parsley and serve hot. This dish is delicious with baguette.
