Potato stew with sausages

Ingredients for 4 servings:

  • 500 g potatoes
  • 400 g leek, also possible frozen
  • 150g bacon
  • 100 g soup vegetables, frozen
  • 800 ml meat broth
  • 25 g Italian herbs, frozen
  • 250 g Cabanossi
  • 1 can of tomato(s), pureed, e.g. pizza tomatoes or other seasoned varieties
  • some salt and pepper

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour

Peel and dice the potatoes. Slice the leek into 1/2 cm thin rings. Cut the bacon into strips and fry in a pan. Sauté the frozen vegetables for 2 minutes. Add the leek and potatoes and sauté briefly, then add the hot stock. Season with the herbs, salt, and pepper; bring to a boil, then cover and simmer for 20 minutes. Cut the sausages into any size and add them to the pan along with the tomatoes. Cover and cook for about 5-10 minutes. When the potatoes have the right consistency, season again with salt and pepper.
