Ingredients for 4 servings:

  • 1 kg pear(s), peeled, pitted and chopped
  • 1 vanilla pod(s)
  • 250 g gelling sugar 2:1
  • 50 g chocolate, dark, chopped
  • ½ lemon(s), juice

Instructions

Working time approx. 30 minutes; Rest period approx. 1 day; Total time approx. 1 day 30 minutes

Drizzle the pear pieces with lemon juice and let them steep overnight with the vanilla pod and scraped-out vanilla seeds. Then gently cook the pears until soft, remove the vanilla pod, and puree the pears. Add the gelling sugar, bring back to a boil, and simmer for 4 minutes, stirring continuously. Remove from the heat and add the chocolate when filling. I first poured the chocolate onto the ladle and then into the jar along with the pear jam to prevent the chocolate from melting. Turn the sealed jars upside down for 5 minutes.
