Raspberry and mascarpone dessert

Ingredients for 6 servings:

  • 600 g raspberries, fresh or frozen
  • 500 g mascarpone
  • 100 ml coconut milk
  • 50 g desiccated coconut
  • 1 vanilla pod(s), scraped pulp
  • vanilla sugar
  • sugar, brown

Layered dessert with fruit and cream

If desired, thaw the raspberries in a sieve and spread them on the bottom of a baking dish or similar. Glass is particularly attractive here, as you can see the layers. The mascarpone is stirred with the coconut milk, coconut flakes, vanilla pulp, and vanilla sugar until smooth, then pour over the raspberries. Finally, brown sugar is sprinkled over the cream to create a sweet layer.
