Vegan vanilla pudding

Ingredients for 2 servings:

  • 300 ml milk, vegan, (oat milk, soy or almond milk))
  • 3 tsp, leveled psyllium husk, ground (fiber husk)
  • 1 vanilla pod(s)
  • 50 g sugar (coconut blossom sugar)

Instructions

Working time approx. 10 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 10 minutes

without cooking – very fast

Take 2 x 3 tablespoons of the oat milk. Scrape out the vanilla pod and mix the contents well with 3 tablespoons of oat milk using a fork. Mix the sugar with 3 tablespoons of milk. Mix the remaining oat milk with the ground psyllium husks using a blender or hand blender. Add the milk, sugar, and vanilla and mix briefly. Transfer to two dessert bowls or glasses and let stand for at least an hour. Can easily stand longer. Tip: Mix in 2 tablespoons of coconut flakes.
