Chicory tipsy and baked

Ingredients for 4 servings:

  • 8 chicory
  • 2 tbsp butter
  • ⅛ liter white wine, dry
  • 8 slices of cooked ham
  • 8 slices of Emmental cheese
  • Salt and pepper, white
  • some butter for the mold

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 40 minutes

Trim and wash the chicory, then cut a wedge shape at the bottom. Heat 2 tablespoons of butter in a pan and fry the chicory for 2-3 minutes. Deglaze with the white wine, cover, and simmer for 15 minutes. Remove the chicory and wrap each one in a slice of cooked ham. Place in a buttered baking dish and top each chicory with a slice of cheese. Season with salt and pepper. Bake in a preheated oven at 200°C (top/bottom heat) for about 10-15 minutes. I like to eat this with mashed potatoes.
