Ingredients for 4 servings:
- 200 g cream (alternatively Cremefine for whipping)
- 250 g mascarpone
- 250 g cream cheese or low-fat quark
- 100 g sugar
- 1 packet of vanilla sugar
- 200 g speculatius (butter or spiced speculatius)
- 400 g berries (frozen), mixed
Instructions
Working time approx. 30 minutes; Total time approx. 30 minutes
Whip the cream until stiff. Mix the mascarpone, quark, sugar, and vanilla sugar together, and fold in the cream. Spread about 3 tablespoons of the cream into a square baking dish, then place a layer of speculatius biscuits on top. Arrange the berries on top (the frozen fruit can be taken out of the refrigerator the night before). Spread the remaining cream on top and cover with speculatius biscuits. Refrigerate for 4-5 hours or even overnight before serving. Dust with powdered sugar before serving. Tips: I personally prefer to use finely crumbled speculatius biscuits for the final layer; this makes it easier to scoop the dessert out of the dish later. You can, of course, make everything a bit lower in calories and replace the cream with Cremefine for whipping (you could even try the vanilla version), or even use only low-fat quark without mascarpone. Just make sure you stir the quark a little with a mixer beforehand. Stirring for longer makes the quark much creamier.
