Light mandarin orange and speculatius quark

Ingredients for 1 servings:

  • 10 tangerines
  • 2 lemons, organic
  • 750 g quark, 20% fat
  • 100 ml cream
  • 2 packets of vanilla sugar
  • 2 tbsp sugar
  • 150 g spiced speculatius
  • Cinnamon powder for dusting

Instructions

Working time approx. 15 minutes; Rest time approx. 30 minutes; Total time approx. 45 minutes

Grate the zest of one lemon, squeeze the juice of both lemons, then combine the zest and juice with the quark, cream, vanilla sugar, and regular sugar in a large bowl. Peel the mandarins, separate the individual segments, and halve them. Fold into the quark. Roughly crumble the speculatius biscuits between your fingers and fold in. Let it chill in the refrigerator for about 30 minutes. Serve dusted with cinnamon.
