Peel the pomelo and remove the individual segments from the skin. Cut them into smaller, bite-sized pieces and place them in a bowl. Peel the carrots, grate them finely, and add them to the pomelo. Wash the mint leaves, chop them slightly, and add them. Squeeze the limes and add the juice and sugar to the bowl. Mix everything together and divide between 4 plates. Chop the unpeeled almonds into sticks and arrange them on top. Alternative: If you like it a bit spicier and (even) lower in calories, you can add a handful of sliced ​​spring onions instead of the almonds for a bit of extra spice.
