Cucumbers with olives

Ingredients for 4 servings:

  • 2 cucumbers, peeled and thinly sliced
  • 1 tbsp dill, freshly chopped
  • 1 tbsp lemon juice
  • 1 tbsp olive oil, very good
  • 20 olives, pitted and quartered
  • n. B. Salt

Instructions

Working time approx. 15 minutes; Rest time approx. 40 minutes; Total time approx. 55 minutes

Place the cucumber slices in a colander, sprinkle with salt, and let them drain for 30 minutes. Rinse the cucumber slices, pat dry, and place them in a salad bowl. Sprinkle the cucumber with dill and drizzle with lemon juice and olive oil. Add the olives, season lightly with salt if desired, and mix well. Let the salad rest for a few minutes, then serve.
