Ingredients for 4 servings:

  • 1 ½ cup(s) bulgur, (fine)
  • 1 pack of tomatoes, pureed
  • 2 tbsp tomato paste
  • 2 stalk(s) spring onion(s)
  • 3 tomatoes
  • 3 large peppers (2 mild + 1 hot)
  • Parsley
  • salt and pepper
  • Spice(s), pul Biber (alternatively hot paprika powder)
  • lemon juice
  • oil

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Combine the passata, tomato paste, and a squeeze of lemon juice in a large pot. Season with salt, pepper, and pul Biber (as desired), and bring to a boil. Remove from the heat and stir in enough bulgur until it becomes mushy/slightly dry. Cover and let stand for about 15 minutes. Meanwhile, chop the leeks, tomatoes, and peppers and place them in a bowl. Finely chop a handful of parsley and add it. Add the bulgur, stir, and pour half to a full (or as desired) Turkish tea glass of oil over it. Stir again, and you’re done!
