Red onions with oregano and pine nuts from the oven

Ingredients for 2 servings:

  • 6 onions, red
  • 4 tbsp olive oil or rapeseed oil
  • 1 tsp oregano
  • 2 pinches of salt
  • some pepper, long
  • 4 tbsp, sifted pine nuts

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 40 minutes

Peel the onions. Then quarter or eighth them. Toss the onions in a bowl with oil, oregano, salt, and pepper, and season to taste. Spread on a baking sheet lined with parchment paper. Finally, scatter the pine nuts on top. Bake in a preheated oven at 180°C fan/convection oven (200°C top/bottom heat) for about 25-30 minutes. The onions will then be slightly crispy around the edges, and the pine nuts will also be lightly browned. Serve with grilled steaks, sausages, or other pan-fried meats. Vegetarians could serve with a garlic dip and baked potatoes.
