Avocado-Tomato Salad

Ingredients for 2 servings:

  • 2 avocados
  • 4 tomatoes
  • 4 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • ½ lemon(s), juice
  • salt and pepper
  • Ciabatta
  • 1 garlic clove(s)
  • olive oil
  • Herbs as desired

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Cut the avocados and tomatoes into bite-sized cubes and place them in a bowl. Combine 4 tablespoons of olive oil, balsamic vinegar, and the juice of half a lemon and drizzle over the bread. Season with salt, pepper, and herbs to taste. Slice the ciabatta. Press a garlic clove into a small bowl and mix with the olive oil. Brush the mixture onto the bread slices. Roast at approximately 180°C until golden brown and serve lukewarm with the salad.
