Sweet potato and apple soup with curry

Ingredients for 2 servings:

  • 1 tsp oil
  • 1 small onion(s), diced
  • ½ tsp curry powder
  • 300 g sweet potatoes, peeled and diced
  • 1 apple, peeled and diced
  • 250 ml vegetable stock
  • salt and pepper

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes

Heat oil in a large pot. Sauté the diced onion with the curry powder over medium heat for three minutes until translucent. Add the sweet potato, apple, and broth. Bring to a boil, then reduce heat to low and simmer, covered, for 10 minutes. Remove the pot from the heat and purée the soup with an immersion blender until smooth. Return to the heat and season with salt and pepper. Serve with crusty white bread. Important: Always sauté the curry powder to prevent it from becoming bitter.
