Seeded apple muffins

Ingredients for 1 servings:

  • 150 g natural yogurt
  • 150 g brown cane sugar
  • 2 tsp vanilla sugar
  • 1 pinch of salt
  • 100 ml rapeseed oil
  • 2 eggs
  • 300 g flour
  • 1 tbsp baking powder
  • 100 g nuts, chopped
  • 2 tbsp sunflower seeds
  • 100 g carrot(s)
  • 2 apples (e.g. Boskop or Elstar)
  • some lemon juice, for drizzling

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 45 minutes

with carrots, nuts + sunflower seeds – not only delicious but also healthy

Preparation: Prepare 12 muffin cups. Preheat the oven to 200°C. Peel and core the apples, coarsely grate them, and immediately drizzle with a few drops of lemon juice. Peel, trim, and finely grate the carrots. In a mixing bowl, whisk the eggs with the sugar, a pinch of salt, the yogurt, and the rapeseed oil until the sugar is dissolved. In another bowl, thoroughly mix the flour with the baking powder, chopped nuts, and sunflower seeds and quickly stir into the egg mixture, stirring constantly. Immediately divide the mixed batter into 12 muffin cups and bake for 20-25 minutes at 200°C until golden brown. If you like, dust the cooled muffins with a little powdered sugar. These muffins will keep for up to 3 days if stored in a food storage container.
