Ingredients for 2 servings:
- 500 g potatoes, new, small, with skin
- 1 tbsp nut oil, e.g. hemp seed oil, sesame oil or hazelnut oil.)
- ½ tbsp lemon zest, finely grated
- 1 tbsp lemon juice, freshly squeezed
- ½ tbsp freshly chopped chives (alternatively: frozen chives or mixed frozen herbs)
- Salt
- White pepper, freshly ground
Instructions
Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes
from new potatoes
Brush the potatoes thoroughly. Cook in lightly salted water for about 15 minutes until tender. Combine the oil with the lemon zest and juice, and season with salt and pepper. Drain the potatoes and place them in a bowl. Toss the hot potatoes with the oil. Sprinkle with chives and serve immediately. Tip: New potatoes can be easily peeled by grating them. Pairs well with fish and any pan-fried dish, baked tomatoes, baked or roasted feta, asparagus, fresh salad, and much more.
