Ingredients for 3 servings:
- 10 sprigs of thyme
- 1 tsp lemon zest, fine
- 2 tbsp lemon juice
- 4 tbsp olive oil
- 6-minute chicken schnitzel
- salt and pepper
Instructions
Working time approx. 30 minutes; Rest time approx. 1 day 6 hours; Cooking/baking time approx. 10 minutes; Total time approx. 1 day 6 hours 40 minutes
Chicken on a skewer
Pick off the thyme leaves and roughly chop them. Then mix them with the finely grated lemon zest, lemon juice, and olive oil to make the marinade. Place the chicken schnitzels and the marinade in a freezer bag, seal it, and let it sit for at least 30 minutes. Meanwhile, soak 6 wooden skewers in lukewarm water. Remove the meat from the freezer bag and generously scoop out the marinade. You’ll need it again later. Skewer the meat and grill it on an oiled grill rack for 6-8 minutes on all sides, seasoning with salt and pepper. Brush both sides again with the marinade halfway through the cooking time. Tip: Alternatively, you can use a non-stick pan to fry the skewers. Add about 2-3 tablespoons of oil.
